Mediterranean Roasted Cauliflower

Ingredients

  • 1 whole cauliflower, chopped
  • 1 cup cherry tomatoes
  • 1 head garlic, whole cloves separated and peeled
  • 1 lemon, zest and juice
  • ¼ cup extra-virgin olive oil
  • freshly ground black pepper
  • sea salt
  • sprig fresh rosemary or oregano (optional)
  • 1 ounce feta cheese

Instructions

  1. Preheat your oven to 350°.
  2. Combine the cauliflower, tomatoes, and garlic in a baking dish.
  3. Zest some of the lemon and squeeze just a splash of juice over the vegetables.
  4. Drizzle with olive oil, freshly grind some black pepper, and sprinkle with a dash of sea salt.
  5. Add a sprig or two of fresh rosemary or oregano if you like. But remember rosemary is very potent so use it sparingly.
  6. Roast in the preheated oven for one hour. Stir occasionally so that everything cooks evenly.
  7. Poke the cauliflower stems with a fork until done to your liking.
  8. Garnish with feta cheese.
